slow cooker spiced lamb (and pizza and shepherd’s pie)

Slow cooked spiced lamb
I go through phases of using the slow cooker.  Creme caramel last week and this week slow cooked spiced lamb.

  • rolled shoulder of lamb
  • 1/2 tsp dried chilli flakes
  • 1tsp of coriander seeds ground
  • 2 medium carrots, chopped
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 2 sticks of celery, chopped
  • small glass of white wine
  • 4-6 anchovy fillets
  • 2 tins of tomatoes
  • small glass of white wine
  • 1tbsp of balsamic vinegar

Roll the lamb in the chilli and coriander, dust with seasoned flour. Fry lamb in a glug of olive, in a heavy based pan, until slightly browned on all sides, then remove from pan.  Add some more oil and cook veg on a low heat with lid on until slightly softened, add the anchovies and stir until dissolved. Stir in the wine and vinegar, then add the tomatoes.  Bring it to the boil, put the lamb back in and simmer for 5mins.  Then transfer to the slow cooker and cook on low for about 8hours.

We served this with boulangere potatoes (sweet and ordinary spuds) and steamed broccoli.  We then blended the sauce and used it on pizzas and finally chopped up the lamb and made it into a shepherd’s pie.
