The family friendly veggie weekly – 28th Oct

The end of the first full week of increasing our veggie meals.

Meal 1 – Roast butternut squash risotto. Roasted squash stirred into a basic risotto, drizzled with some good, thick, aged balsamic vinegar.

Verdict…. This is a favourite of The Cyclists and mine, unfortunately not for the boys.  They love risotto, but not the roast squash, maybe it was something to do with me drawing a face on it and saying it looked like Raymond the squash from Mr Blooms nursery? I will not name the vegetables in future! Anyway it very tasty especially with a drizzle of balsamic vinegar.

Meal 2 – Vegetable and bean hotpot Selection of dried beans cooked and stirred into a tomatoey sauce with carrots, topped with sliced potatoes and baked. Served with purple sprouting broccoli.

Verdict…. Disaster!! I baked this for over an hour and the potatoes were still raw in places!!! I was not happy, in fact I was downright grumpy.  To make things worse it wasn’t that tasty, it needed something else to stop it being bland, but i’m not sure what, maybe some cheese in with the potatoes.  The boys ate it though and to my surprise they ate all of the sprouting broccoli too. We thought maybe some diced chorizo stirred in would be tasty 😉

Meal 3 – Sweetcorn fritters We had Derby Grandma and Grandad to stay for dinner with us and with all the excitement of fritters I forgot to take a photo, but the recipe is here.  Served with oven baked potato wedges and a simple salad.

Verdict….. The Farmer is a champion sweetcorn muncher and happily ate two of these and all of his wedges.  The Fireman didn’t seem so keen, he’s a bit funny about fried, crispy things, wish I could be picky with fried foods! He still ate one and had extra wedges.  All of us adults enjoyed them.  The addition of some curry powder makes a real difference, also served with sweet chilli dipping sauce.

Pumpkin soup – requested by The Fireman, could be an interesting result!

Burritos with refried beans, salsa and cheese.  Based on a recipe from Thomasina Miers book, Wahaca. Happy cooking till next week!
