Chocolate, coconut and banana muffins – Lovely Leftovers
With half a can of coconut milk and three spotty bananas I thought we’d try chucking them in all together and tarting it up a bit with some chocolate. To be honest you can’t taste the coconut much, but at least it didn’t get thrown away and the muffins were lovely and moist. This was a recipe for the boys. They set about mashing the bananas and then ate almost 50% of them whilst I was measuring out flour. They were also good at stirring in the chocolate. They were great served with a cappuccino or a bambinoccino. We also had them for pudding that night covered in custard, nom, nom, nom.
Recipe to make 12 large muffins
350g plain flour
1.5 tsps baking powder
1/2 tsp bicarb
160g caster sugar
200ml coconut milk
175ml of buttermilk or half and half plain yoghurt and milk
1 egg
70g melted butter
2-3 ripe bananas mashed
100g melted dark chocolate add a few tbsps milk if the chocolate is too thick
Instructions
1. Heat oven to 170c
2. Mix together all dry ingredients
3. Mix together coconut milk, buttermilk (or milk and yoghurt) and egg. Add this to the dry ingredients and beat well.
4. Beat in the melted butter and mashed bananas
5. Spoon the mix into muffin cases, then put a large tsp of melted chocolate on the top of each one. Swirl it around a little.
6.Bake for 20-25mins
